Easy to make, easy to eat

We're sure parents can use all the quick, fun, and easy tips on taking care of the kiddos at home during a time like this. Before you go and start ripping your hair out, think of fun activities you can do with the kids! 

Jen BT took this time to cook with her 5-year-old. They made a batch of healthy chocolate chip muffins.....check out the recipe below & stay tuned for more recipes and fun activities for the kids! 



Quick & Easy Healthy Chocolate Chip Muffins for the kiddos! 

Great for Breakfast or an easy snack ​

I love making muffins with my 5 year old! It's a great bonding activity for us and helps get out the wiggles with all the mixing, measuring and excitement with tasting all the yummy ingredients. 

What you need:  Muffin Pan or Mini Muffin Pan

I just bought a silicon mini muffin pan for $15 from Target since mini muffins are less crumbly and my kids feel special they get TWO muffins vs one (jokes on them, because they're small, lol). 

PREP: 20 minutes

COOK: 10 minutes

Total Time: 30 minutes



1 1/3 cups flour (whole wheat if you wanna be extra healthy)

3/4 cup old fashioned oats

4 tbsp light brown sugar

3 tsp baking powder

1 tbsp ground flax seed milled (optional)

2 medium eggs

3/4 cup milk (whole preferred, or 2%)

1/4 cup unsalted butter melted

1 small apple grated with the peel (1/2 cup apple sauce to save time)

3 tbsp mini chocolate chips 

Other Options to try with your muffin base besides chocolate chips: 

Blueberries (we like blueberries AND chocolate chips, about a handful in your batter)

Carrot, Raisin & Walnuts: 

1/4 medium carrot grated

1 tbsp Raisins 

1 tbsp Walnuts
